Hello everyone, today's recipe is for Ham Hock and Spinach Parcels (Gluten & Dairy Free).
Hope you are all having a good week. I'm off from work and while like everyone else I would rather be away on holiday I'm making the most of my time at home. I'm tidying out all the books, CDs and DVDs I haven't touched in years, starting my Christmas shopping and taking a bit of time to update my website.
I've finished my website plan for November and I hope you find some exciting new recipes to try out. I've been posting recipes for six years now but I haven't ran out of inspiration yet. I've also just reached 35,000 followers on Facebook - while number of followers shouldn't matter it is nice to know you find the content I post useful.
Today's recipe is for these lovely ham hock and spinach puff pies. You can easily buy gluten and dairy free puff pastry sheets in the supermarket nowadays which makes recipes like this much easier. I've made a dairy free creamy sauce and stirred through shredded ham hock and spinach.

Preheat the oven to 200 oC
Roll out the puff pastry sheet and cut into 4 squares
Place the dairy free spread in a saucepan over a medium heat
Stir in the gluten free flour
Pour in the dairy free milk and stir until it comes to the boil
Simmer until thickened, about 5 minutes
Stir in the spinach, ham hock and dairy free cream cheese
Season with salt and pepper
Place the puff squares on a lined baking sheet
Divide the mixture into four and place in the centre of each pastry square
Close the pies by folding the corners into the centre
You can brush with a beaten egg prior to baking to make the pastry golden
Bake for 20 minutes
Enjoy while hot
