Hello everyone, welcome to my latest recipe for Gluten and Dairy Free ACE Muffins.
A few years I go posted a recipe for ACE juice - named so after the vitamin A, C and E. I first had this lovely juice in Italy - you can probably get it anywhere but I always associate it with Rome as it was the first place I tried it.
It got me thinking that orange, carrot and lemon flavouring of ACE juice would make a perfect breakfast muffin - hence today's recipe.

Preheat the oven to 180 oC
Line a muffin tin with 6 paper cases
Mix together the lemon zest, orange zest, brown sugar, vegetable oil, eggs and grated carrot
Gently fold in the gluten free flour
Divide the mixture between 6 muffin cases
Bake for 25 minutes
Allow to cool before enjoying
