Preheat the oven to 180 oC and grease a 6" cake tin
Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy
Mix in the egg and gluten free flour
Stir through the dairy free chocolate chips
Spoon into the cake tin and spread flat
Bake for 15 minutes
Allow to cool in the cake tin for 10 minutes and then transfer to a wire cooling tray
I decorated my cookie with a drizzle of dairy free white chocolate and sprinkles
