Hello everyone, welcome to my latest dinner recipe for Gluten and Dairy Free Chicken Fajita Pasta. Although not a traditional Italian pasta recipe by any stretch of the imagination it does make a perfect week night meal. Gluten free pasta is stirred through a tomato sauce with fajita seasoning, chicken, peppers, onion and fresh coriander.

Ingredients
  • 150 grams gluten free pasta (cooked per the instructions on the packet)
  • 1 large chicken breast (diced)
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 1 pepper (diced)
  • 1 garlic clove (minced)
  • 400 grams tin of chopped tomatoes
  • 1 tablespoon fajita seasoning
  • 1 tablespoon fresh coriander (chopped)
  • 4 tablespoons grated dairy free cheese
Instructions
  1. Add the olive oil, chicken, garlic, peppers and onions to a large shallow pan over a medium heat

  2. Cook for 8 minutes then sprinkle over the fajita seasoning

  3. Pour in the chopped tomatoes, bring to the boil and then simmer for 15 minutes

  4. Season to taste then stir through the fresh coriander, grated dairy free cheese and cooked pasta
