Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Carrot & Parsnip Soup. I think this will probably be the last of my more wintery recipes and it is finally getting a bit warmer here in Scotland. Most weeks I make a pot of soup as they are a great go to lunch idea that can easily be made gluten and dairy free.

I do have a few new soup recipes in the making which I'll post cover the next month. It includes a delicious chicken, leek and potato soup, a harissa roasted carrot soup and a vegetable curry soup.

Ingredients
  • 2 onions (diced)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 1 teaspoon smoked paprika
  • 500 grams parsnips (peeled and sliced)
  • 500 grams carrots (peeled and sliced)
  • 1 liter vegetable stock
  • salt and pepper (for seasoning)
Instructions
  1. Place the olive oil, onion and garlic in a large pan over a medium heat - saute for 5 minutes

  2. Stir in the smoked paprika, carrots and parsnips 

  3. Pour in the vegetable stock and bring to the boil

  4. Simmer for 25 minutes or until the vegetables are tender

  5. Blend until smooth and season to taste with salt and pepper
