Tomato, Chilli and Red Onion Chutney

Hello everyone, welcome to my latest recipe for Tomato, Chilli and Red Onion Chutney. 

A simple chutney recipe that tastes great and is naturally gluten and dairy free, except the soy sauce, which you can either omit or get a gluten free version. I use this chutney a lot and you will see a few links to this recipe popping up in future posts.

This will keep in the cupboard for months and up to 1 month in the fridge once opened. I like to make this at Christmas time and divide up into smaller jars. It makes a nice homemade gift or as part of a larger homemade hamper.

Description

An easy recipe for Tomato, Chilli and Red Onion Chutney using simple ingredients you may already have in your store cupboard.

Ingredients
  • 750 grams cherry tomatoes (halved)
  • 2 red onions (diced)
  • 2 garlic cloves (minced)
  • 1/4 teaspoon chilli flakes
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cumin
  • 250 milligrams white wine vinegar
  • 2 teaspoons ground coriander
  • 300 grams light brown sugar
  • 2 teaspoons gluten free soy sauce
Instructions
  1. Place the onion, tomatoes, garlic, chilli, ginger, cumin and coriander in a pan

  2. Add the white wine vinegar and sugar

  3. Cook on a low heat stirring until the sugar has dissolved

  4. Bring to the boil then reduce the heat until it is simmering gently

  5. Cook until the mixture reduces to a jammy consistency

  6. Stir in the soy sauce and cook for a further couple of minutes

  7. Spoon into a sterilised jar and seal
