Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Thai Coconut Chicken Curry.

Don’t be put off by the number of ingredients in this recipe, a lot of them you might have in your store cupboard already.   I actually only bought the fresh ingredients (chicken, onion, peppers and coriander) the rest I had lurking somewhere in the kitchen.

You also don’t need to go to all the hassle of moulding the rice and having it fancy in the middle of the bowl of curry.  I don’t actually have dinners that look like this every night, what you don’t see behind the camera is the other plates with rice and curry haphazardly spooned onto a normal plate.

Ingredients
  • 2 chicken breasts (cut into small pieces)
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 1 pepper (diced)
  • 1 tsp ground ginger
  • 2 garlic cloves (minced)
  • 1 tsp curry powder
  • 200 ml coconut milk
  • 180 ml chicken stock
  • 1 tsp cornstarch (dissolved in 1 tbsp water)
  • 1 tbsp brown sugar
  • 1 tbsp peanut butter
  • 1 tbsp tamari
  • 1 tbsp lime juice
  • 1 tbsp sweet chilli sauce
  • 1 tbsp fish sauce
  • 150 g gluten free rice (cooked per packet)
  • 1 tbsp fresh coriander (chopped)
  • salt and pepper (for seasoning)
Instructions
  1. Heat the olive oil in a shallow pan over a medium heat

  2. Add the chicken, onion and peppers

  3. Sauté for 5 minutes

  4. Add in the ginger, garlic and curry powder and cook for a couple of minutes

  5. Pour in the coconut milk, chicken stock and dissolved cornstarch

  6. Stir in the brown sugar, peanut butter, tamari, lime juice, sweet chilli sauce and fish sauce

  7. Bring to the boil and gently simmer for 10 minutes

  8. Season to taste and stir through the coriander

  9. Serve with the rice
