  • 2 salmon steaks
  • 1 tablespoon olive oil
  • 1 teaspoon fajita seasoning
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cinnamon
  • 1 teaspoon sugar
  • 1 teaspoon lime juice
  • 1 onion diced
  • 1 pepper diced
  • 4 Corn taco shells
  • 8 Cherry tomatoes halved
  • 2 tablespoons coleslaw
  • 2 tablespoons guacamole
  • 40 grams dairy free cheese cubed
  1. Preheat the oven to 180 oC

  2. Stir together the olive oil and fajita seasoning

  3. Place the salmon steaks into a casserole dish, season with salt and pepper and drizzle with the fajita oil

  4. Bake in the oven for 10 minutes or until the salmon is cooked

  5. Heat a little olive oil in a shallow pan
  6. Place the sliced onion and peppers in a bowl with the oregano, cayenne pepper, sugar, cinnamon and lime juice

  7. Cook for eight minutes on a medium heat

  8. Serve with the salmon with the vegetables, taco shells, gauacamole, tomatoes, coleslaw, tomatoes and dairy free cheese
