Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Sausage Casserole.
Today’s recipe is a kind of mishmash of a French cassoulet and a British casserole. I’ve taken the rich tomato base and the braised sausages from a cassoulet but I’ve omitted the white beans as I’m not a fan. A number of traditional British casserole have pork sausages but also contain pearl barley which obviously isn’t gluten free. As an alternative to the pearl barley I’ve used some brown rice which works a treat.
This dish is great to prep ahead and then reheat the night you want to use it. It also freezes well if you want to make a big batch and divide into individual portions.

Add the olive oil to a large pan over a medium heat
Add the sausages and cook until the skin is roasted, about 10 minutes
Remove from the pan and set aside
Add the onion, peppers, oregano, garlic, paprika and chilli flakes
Sauté for 8 minutes
Stir in the chopped tomatoes, stock, rice and seasoning
Bring to the boil then reduce to a simmer
Add the sausages back into the pan
Simmer for 25 minutes or until the rice is cooked
