Pulled Pork Mac & Cheese (Gluten Free, Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Pulled Pork Mac & Cheese.

I know I've called this macaroni cheese but it quite clearly made with fusilli.  For some reason I find it really difficult to source gluten free macaroni - none of the supermarkets near me stock any.

I love BBQ pulled pork and tend to cook a large amount of it in the slow cooker.  I always start by using it to make pulled pork burger buns and fries and then run out of ideas.  I've recently worked on a few new recipes including a couple of pasta dishes and another one with a creamy potato gratin topping.

If you don't want to make your own bbq pulled pork there are a few options you can buy in the supermarket that cook in the oven for 30 minutes and are naturally gluten free.

Ingredients
  • 200 grams gluten free pasta
  • 2 garlic cloves (minced)
  • 1/2 green pepper (diced)
  • 1 small onion (diced)
  • 200 milliliters dairy free cream
  • large handful of dairy free cheese
  • large handful of spinach
  • salt and pepper for seasoning
  • 200 grams bbq pulled pork (*)
Instructions
  1. Cook the gluten free pasta per the instructions on the packet
  2. Heat a drizzle of olive oil in a large shallow pan
  3. Stir in the garlic cloves, onion and pepper

  4. Sauté for 5 minutes
  5. Pour in the cream and simmer for a couple of minutes
  6. Season with salt and pepper
  7. Stir in the grated cheese and spinach

  8. Cook for another minute
  9. Stir in the cooked pasta and serve topped with warm bbq pulled pork
