Prawn Panang Curry (Gluten Free, Dairy Free)

Hello everyone, today’s recipe is for a Thai favourite of mine - Prawn Panang Curry.  It is naturally gluten and dairy free which makes a great dish to source the ingredients for. It is also really quick to put together making it a great choice for a week night meal.

Hope you all managed to find some suitable gluten and dairy free pancake recipes to make yesterday.  I went with chocolate chip and made them for a treat pudding rather than at breakfast time.

Try out this delicious and simple recipe for Thai Gluten Free and Dairy Free Prawn Panang Curry - perfect for a week night meal

Ingredients
  • 1 olive oil
  • 2-3 tablespoons Panang curry paste
  • 1 onion (diced)
  • 1 red pepper (diced)
  • 200 grams prawns (peeled and prepped)
  • 400 milliliters can of coconut milk
  • 1 tablespoon brown or coconut palm sugar
  • 1 tablespoon fish sauce
  • 3 kaffir lime leaves (torn)
  • 1 tablespoon crushed peanuts (optional)
Instructions
  1. Heat the olive oil in a shallow pan over a medium heat
  2. Add the onion and red pepper and cook for 5 minutes
  3. Stir in the curry paste and cook for another 5 minutes
  4. Mix in the sugar and fish sauce
  5. Pour in the coconut milk and bring to the boil
  6. Simmer for 15 minutes
  7. Add in the prawns and cook for about 4 minutes
  8. Top with the kaffir lime leaves and crushed peanuts
  9. Serve with rice
