Kung Pao Chicken (Gluten Free, Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Kung Pao Chicken.

bought a coffee from the coffee bar at work today and it was in a Christmas cup!  I couldn't believe it - it was red with Let It Snow printed on it - I love Christmas but man it is only September.  I then remembered that every year I promise myself I'm going to get ahead of the Christmas posts for the websites and start them early.  For the last 4 Christmas's this hasn't happened but maybe this year will be different.

As it's Friday night and some of you might be missing a good Chinese takeaway I thought I would share this easy recipe for Kung Pao Chicken.  My favourite Chinese dishes always include chicken, spring onions and peanuts so this ticks all the boxes for me.

Ingredients
    For the chicken:
  • 1 tablespoon cooking oil
  • 2 garlic cloves (minced)
  • 1/4 teaspoon chilli flakes
  • 1 teaspoon fresh ginger (finely sliced)
  • 2 chicken breasts (diced)
  • 4 spring onions (sliced)
  • 1 tablespoon peanuts
  • For the sauce:
  • 2 tablespoons brown sugar
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons tamari
  • 100 milliliters chicken stock
  • 1 tablespoon cornflour
Instructions
  1. Place the oil in a shallow pan over a medium heat

  2. Add in the garlic, chilli, ginger and chicken

  3. Saute for 5 minutes

  4. Add in the spring onions and peanuts

  5. Stir fry for 5 minutes

  6. Whisk together the ingredients for the sauce and pour into the pan with the chicken

  7. Simmer the sauce for 3-5 minutes

  8. Serve with rice and top with extra spring onions and chilli flakes
