Try out my new recipe for Gluten Free and Dairy Free Chicken and Leek Pasta Bake perfect served with some garlic bread

  • 2 leeks (diced)
  • 2 chicken breasts (diced)
  • 1 tablespoon cornflour
  • 400 milliliters chicken stock
  • 250 milliliters dairy free cream
  • 275 grams gluten free pasta
  • 2 teaspoons basil
  • salt and pepper (for seasoning)
  • 4 tablespoons dairy free cheese (grated)
  1. Cook the pasta according to the instructions on the packet and set aside
  2. Heat some olive oil in a saucepan
  3. Add chopped leak and cook for 2 minutes
  4. Add the diced chicken, replace the lid and cook for 20 minutes stirring occasionally
  5. Add the flour and stir until the chicken is coated
  6. Add the stock and stir until thickened
  7. Stir in the cream, seasoning and basil until bubbling then remove from the heat
  8. Mix in the cooked pasta
  9. Pour into a casserole dish and top with the dairy free cheese
  10. Heat under the grill for a couple of minutes
