Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Chinese Ginger Chicken. I've been working on a number of new ideas for easy meals. I know we are all in lockdown but I find the days are so busy. As well as work I always seem to have a number of other little projects on the go.

When it come to dinner I'm always after a quick and easy but tasty option. This ginger chicken, I hope you agree, is one of these recipes. A few simple ingredients, you may already have in your store cupboard, is whisked together to form a simple sauce. Stir your chicken and veggies with the sauce and serve with rice.

Description

This delicious recipe for Gluten and Dairy Free Chinese Ginger Chicken is perfect for a quick week night meal

Ingredients
  • 2 chicken breasts (diced)
  • 55 milliliters tamari
  • 2 teaspoons brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 1 onion (diced)
  • 2 tomatoes (quartered)
  • 1 pepper (diced)
Instructions
  1. Whisk together the tamari, brown sugar, cornstarch, ground ginger and pour over the diced chicken

  2. If you have time, leave to marinade in the fridge for a couple of hours or overnight

  3. Heat the olive oil in a large shallow pan over a medium to high heat

  4. Add in the chicken with the marinade sauce and saute for 5 minutes

  5. Add in the onion, pepper and tomatoes and cook for another 5 minutes or until the chicken is cooked through

  6. Season to taste and then serve witth boiled rice
