Hello everyone, welcome to my latest recipe for this delicious Gluten Free and Dairy Free Chicken Satay Noodle Bowl. It has been a busy week so far and I haven’t got round to typing up my Roasted Salt and Vinegar Chickpea recipe I promised. I’ll make sure I put some time aside at the weekend to get it published. I also have some lovely baking recipes I need to type up and share including a marble espresso cake and a lemon drizzle loaf.
Tonight’s recipe is for this simple chicken satay noodle bowl. If you can’t find gluten free noodles then gluten free spaghetti can be an okay substitute. As with most of my recipes you can substitute out the meat and veggies to suit your own preference.

Ingredients
2tbsp tamari
2tbsp fish sauce
3tsp brown sugar
2 garlic cloves (minced)
4tsp cornflour
1tsp ground ginger
2tsp curry powder
60g peanut butter
6tbsp water
200g gluten free noodles
1tbsp olive oil
1 large chicken breast (diced)
1 pepper (diced)
1 onion (diced)
100g mushrooms (sliced)
Instructions
Cook the noodles per the instructions on the packet and set aside
To make the satay sauce whisk together the tamari, fish sauce, brown sugar, cornflour, minced garlic, ginger, curry powder and peanut butter and set aside
Add the olive oil to a large shallow pan over a medium heat
Add in the chicken, onion, peppers and mushroom
Saute for 7 minutes
Add in the noodles and pour over the satay sauce
Stir fry for another three minutes and season to taste
I served mine topped with some fresh coriander and crushed peanuts
