Hello everyone, my latest recipe is for Gluten Free and Dairy Free Chicken Cacciatore.
I'm on a day off today and taking a bit of time to get caught up on the Christmas recipes for the website. This afternoon I baked a delicious Tarta Di Santiago which is a lovely Spanish almond cake often served at Christmas. I have a few other recipes ready to go like Brownie Gift Jars, Party Food Ideas, Iced Mince Pies and Peppermint White Hot Chocolate. Hopefully I have a recipe that suits everyone over December.
Tonight's recipe is a perfect winter warmer - Chicken Cacciatore. I think traditional cacciatore has olives in it - I have omitted them as it is one of the few things I don't actually like.

Heat the olive oil in a large pan over a medium heat
Brown the chicken legs and then remove from the pan and set aside
Put the onions, mushrooms and garlic into the pan with the chicken juices
Saute the vegetables for 5 minutes
Add in the passata, red wine, rosemary, seasoning and bay leaf
Bring to the boil
Turn down to a simmer, add in the chicken and cook for 30 minutes or until the chicken legs are cooked
