Breakfast Pesto Flatbreads (Gluten Free, Dairy Free)

  • 2 gluten free flatbreads or pitta breads
  • 2 tablespoons dairy free pesto (*)
  • 2 eggs
  • handful of rocket
  • 8 cherry tomatoes (halved)
  • 2 tablespoons dairy free cheese shavings
  • salt and pepper (for seasoning)
  1. Grill the gluten free flatbreads - if you are using a pitta bread make a small hole to deflate the pitta

  2. Spread the dairy free basil pesto on top

  3. Heat some cooking oil in a large shallow pan

  4. Crack in the two eggs and fry until the yolk is still runny - about 3 minutes

  5. Place the eggs onto each flatbread

  6. Top with the rocket, tomatoes, dairy free cheese shavings and season with salt and pepper
