Morning everyone, welcome to my latest recipe for Gluten Free and Dairy Free Banana and Walnut Granola.

I've been looking forward to this weekend as not only it is my birthday but also it is my niece's third birthday.  We have lots of fun things planned and of course I'm baking a cake for us both.  I do have a plaster cast on my right arm at the moment so the cake won't be as adventurous as I had planned originally.  If it works out well I'll make sure to share the recipe so you can try it out.

I have a massive bag of gluten free oats I got on special offer from My Protein in the cupboard so I've been making a lot granola over the last few months.  Incase you wanted to make your own breakfast cereal I thought I would post this simple recipe.

Ingredients
  • 270 grams gluten free porridge oats
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 5 tablespoons honey or maple syrup
  • 4 tablespoons olive oil
  • 4 tablespoons banana chips
  • 2 tablespoons flaked almonds
  • 2 tablespoons walnuts
Instructions
  1. Pre-heat the oven to 150 oC

  2. Heat the sugar, cinnamon, oil and honey in a small saucepan for about 3-5 minutes
    Place the oats in a large bowl and pour over the mix from the saucepan

  3. Stir well until oats are coated in the sugar mix
    Spread out the oats on a large baking sheet covered by parchment paper and place in the oven for 15 minutes

  4. Remove from the oven and stir the oats, return to the oven for another 10 minutes
    Remove from the oven and allow to cool, it will harden during cooling

  5. Stir in the banana chips, flaked almonds and walnuts
    Store in an airtight container
