Dark Chocolate Madeleines (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Dark Chocolate Madeleines.

I love making madeleines for two reason.  The first being that they are a really quick cake batter to put together and the lovely shell shape makes them look pretty without too much effort - I'm actually a lazy cook at heart.

The second reason being my soon to be 2 year old niece.  I made her a tiny madeleine a few weeks ago and it is now a word she says perfectly which is really cute.  It amuses me to see a toddler ask for a madeleine when we are talking about food - I've taught her well.

I've dipped these madeleines in some dairy free dark chocolate and added some sprinkles.  I took this batch into work and a few people commented they look like little ice cream cones.  If you like this recipe I also have one for white chocolate and raspberry madeleines.

Ingredients
  • 3 eggs
  • 1 tsp honey
  • 100 g caster sugar
  • 1/4 tsp baking powder
  • 120 g gluten free plain flour
  • 100 g dairy free spread (melted)
  • 100 g dairy free dark chocolate
  • 1 tbsp sprinkles (double check they are gluten free)
Instructions
  1. Preheat the oven to 180 oC

  2. Whisk together the eggs, honey and caster sugar for a couple of minutes

  3. Stir in the baking powder, flour and melted dairy free spread

  4. Grease a silicone madeleine mould

  5. Fill each mould 3/4 full

  6. Bake for 12 minutes

  7. Remove gently from the mould and allow to cool completely

  8. Melt the dairy free dark chocolate

  9. Dip the end of each madeleine into the chocolate and then add the sprinkles

  10. Allow the chocolate to set before serving
