Hello everyone, my latest recipe is for these delicious Gluten and Dairy Free Strawberry and Lemon Muffins. I’ve been doing a lot of baking recently so over the next few weeks I’ll be sharing a few new recipes. I have a Spiced Blackberry and Apple Loaf, some Chocolate Chip Marshmallow Cookies and a Strawberry Chocolate Chip Cheesecake.
I made these strawberry and lemon muffins for breakfast. I usually make a small batch and out them in the freezer so they I can use them throughout the week. I think this recipe would also make a nice loaf cake. I’ll need to play around with the quantity and cooking time to get it right. I also have on my baking list a lemon and poppyseed loaf cake so I might make that first.

Get into the kitchen and try out my new baking recipe for Gluten and Dairy Free Strawberry and Lemon Muffins - perfect for breakfast.
Preheat the oven to 180 oC
Line a muffin tray with paper cases
Whisk together the caster sugar and dairy free spread until light and fluffy
Beat in each egg one at a time
Fold in the gluten free flour, lemon zest and strawberry pieces
Divide the mixture between six muffin cases
Bake for 25 minutes
Allow to cool before enjoying
