  • 150 grams caster sugar
  • 150 grams dairy free spread
  • 3 eggs
  • 150 grams gluten free self raising flour
  • zest of one lemon
  • 120 grams strawberries (chopped)
  1. Preheat the oven to 180 oC

  2. Line a muffin tray with paper cases

  3. Whisk together the caster sugar and dairy free spread until light and fluffy

  4. Beat in each egg one at a time

  5. Fold in the gluten free flour, lemon zest and strawberry pieces

  6. Divide the mixture between six muffin cases

  7. Bake for 25 minutes

  8. Allow to cool before enjoying
