Roasted Spanish Almonds (Gluten & Dairy Free)

Help everyone, welcome to my latest recipe for Gluten and Dairy Free Roasted Spanish Almonds.

Thanks goodness it’s Friday - I’m looking forward to the weekend as it is both Father’s Day and my parent’s golden wedding anniversary.  Of course they will be celebrated very differently from how I imagined at the start of the year!  This week has been super busy and I still have a tonne to do but I think I’m just going to switch off and have a bath.

While I’ve been working at home I’m trying to make sure I have a sensible amount of snacks.  Working in the kitchen everyday does make it all a bit too easy to eat all day.  I made this simple little recipe last week so I had some healthy snacks.  These almonds also taste great stirred through your favourite salad.

Ingredients
  • 260 g whole almonds
  • 1 tsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • salt and pepper for seasoning
Instructions
  1. Preheat the one to 180 oC
  2. Place the almonds, olive oil, oregano, paprika and seasoning in a bowl
  3. Spread out the almonds on a lined baking sheet
  4. Roast in the oven for 15 minutes
  5. Allow to cool before serving
