Cut the ends of the courgettes and then dice into small cubes. Peel and core the apple then cut into small chunks. Dice the onion and pepper.
Place the courgette, apple, onion, pepper, garlic, brown sugar, vinegar, chilli and seasoning in a large pan. Bring to the boil then simmer for 80 minutes with the lid off or until a thick relish consistency. Spoon into two sterilised jars.
