Chutney (Gluten & Dairy Free)

Hello everyone, today's recipe is for Gluten and Dairy Free Chutney. This is a nice simple recipe using lots of fresh tomatoes. I like to make a jar for the store cupboard and then a few smaller jars for gifts.

This chutney works very well with a gluten and dairy free grilled cheese sandwich. I've also used this chutney in a few of my other recipes. One of my favourites being chutney sausage rolls.

Description

Try making your own Gluten and Dairy Free Chutney - it makes a perfect gift or a nice addition to your store cupboard.

Ingredients
  • 375 g cherry tomatoes (halved)
  • 1 red onion (diced)
  • 1 garlic clove (minced)
  • 1/4 tsp chilli flakes
  • 1/2 tsp ground ginger
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 125 ml white wine vinegar
  • 150 g light brown sugar
Instructions
  1. Place the onion, tomatoes, garlic, chilli, ginger, cumin and coriander in a large pan.  Add in the white wine vinegar and brown sugar.  Cook on a low heat until the sugar has dissolved.
  2. Bring to the boil and then reduce the heat until it is simmering gently.  Cook until the mixture reduces to a jammy consistency.  Spoon into two small sterilised jars.
