Hello everyone, today's recipe is for Gluten and Dairy Free Caramelised Onion Hummus. I can’t believe how much hummus I’ve eaten since I found out I was intolerant to dairy, it’s the perfect substitute for all those dairy loaded dips. As it is something I buy a lot I thought I would have a go at making some.
This recipe works perfectly with some shredded roast chicken and a gluten free pitta bread for dipping. I've also used hummus in the place of crushed avocado with some poached eggs for breakfast.

- 1 onion (diced)
- 1 garlic clove (minced)
- 2 tablespoons olive oil (for the onions)
- 240 grams cooked chickpeas
- 1/2 tablespoon tahini
- 2 tablespoons lemon juice
- 30 milligrams olive oil
- salt and pepper (for seasoning)
