Hello everyone, today's recipe is for Gluten and Dairy Free Caramelised Onion Hummus. I can’t believe how much hummus I’ve eaten since I found out I was intolerant to dairy, it’s the perfect substitute for all those dairy loaded dips. As it is something I buy a lot I thought I would have a go at making some. Hummus is so easy to make at home with a few simple ingredients. Try my recipe for Gluten and Dairy Free Caramelised Onion Hummus.

Ingredients
  • 1 onion (diced)
  • 1 garlic clove (minced)
  • 2 tablespoons olive oil (for the onions)
  • 240 grams cooked chickpeas
  • 1/2 tablespoon tahini
  • 2 tablespoons lemon juice
  • 30 milligrams olive oil
  • salt and pepper (for seasoning)
Instructions
  1. Caramelise the onions and garlic in a saucepan over a medium heat, this takes about 10 minutes. The onions should be soft and golden but not crispy.

  2. Add all the ingredients into a blender and blitz until smooth. If the humous is too thick add more olive oil or water.
