Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Berry White Chocolate Madeira Cake.
I made this cake last week for Eva and I’s birthday. I went with something a bit simpler as I had a plaster cast on my wrist - the right hand of course! If you want to make an easy peasy cake that tastes great then this recipe is for you. You literally put all of the ingredients into one bowl and whisk - that's it. No need to cream dairy free spread and sugar together or adding in eggs one at a time. It is has absolutely been my go to recipe for this type of madeira cake for years now - has never failed me.
Rather than a traditional vanilla frosting and jam filling I've made a dairy free white chocolate frosting, strawberry jam and topped it all with some fresh strawberries and raspberries. Dairy free white chocolate used to be quite hard to find but I've noticed a lot of supermarkets now have it has part of their free from section.
If you want a more traditional vanilla buttercream whisk together 200g icing sugar, 100g dairy free spread and a few drops of vanilla extract.
