Basil Pesto (Gluten & Dairy Free)

Hello everyone, my latest post is for Gluten and Dairy Free Basil Pesto.  Another shortish post from me tonight as I still have one eye covered with a patch. I’ve been getting odd stares wearing my sunglasses in the rain to protect the injured eye!  Anyway I’m off to see a specialist consultant tomorrow so fingers crossed they’ll tell me I can ditch the eye patch.

Back to recipe chat now rather than me moaning about my EDS problems. I made this pesto over the Christmas holidays and then used it in a number of recipes which I’ll share with you on the coming weeks.

Description

No need to miss out on pesto if you are vegan or dairy free. Try my recipe for Gluten and Dairy Free Basil Pesto

Ingredients
  • 3 handfuls fresh basil leaves
  • 110 milliliters olive oil
  • 2 tablespoons pine nuts
  • 3 garlic cloves (minced)
  • salt and pepper (for seasoning)
Instructions
  1. To make the pesto, place the basil, pine nuts and garlic in a blender.  While blending, drizzle in the olive oil.  Season to taste.
