Preheat the oven to 180 oC and grease a 8" round cake tin
Whisk together the eggs, vegetable oil, ground cinnamon, mixed spice, caster sugar and brown sugar.
Gently fold in the gluten free flour and apple pieces
Spoon into the cake tin and bake for 50 minutes
Allow to cool for 5 minutes before removing from the tin
I served mine with a dusting of icing sugar and ground cinnamon
