German Apple Cake

Hello everyone, welcome to my latest delicious baking recipe for Gluten Free and Dairy Free German Apple Cake. This works perfectly as a lovely slice of cake with a big cup of coffee. I also tend to serve it warm with either dairy free custard or ice cream.

I managed to make a dairy free creme brulee for dessert the other night that I was really happy with. Luckily I remembered to take photographs and I'll get the recipe typed up asap.

Ingredients
  • 2 eggs
  • 200 milligrams vegetable oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon mixed spice
  • 100 grams caster sugar
  • 100 grams brown sugar
  • 250 grams gluten free self raising flour
  • 4 medium sized apples (peeled, cored and diced)
Instructions
  1. Preheat the oven to 180 oC and grease a 8" round cake tin

  2. Whisk together the eggs, vegetable oil, ground cinnamon, mixed spice, caster sugar and brown sugar.

  3. Gently fold in the gluten free flour and apple pieces

  4. Spoon into the cake tin and bake for 50 minutes 

  5. Allow to cool for 5 minutes before removing from the tin

  6. I served mine with a dusting of icing sugar and ground cinnamon
