Chocolate & Ginger Loaf Cake (Gluten & Dairy Free)

Hello everyone, looking for a new baking recipe then try out my Gluten and Dairy Free Chocolate and Ginger Loaf. I've made this cake with some grated stem ginger and a little of the syrup from the stem ginger so it is packed with flavour. I popped a slice of this in the microwave for 20 seconds and served it with a scoop of dairy free vanilla ice cream.

I have a few new baking ideas I'm working on recipes for including strawberry milkshakes cupcakes and cherry cheesecake brownies. Hopefully you will see recipes appearing for them soon.

Ingredients
    For the cake:
  • 100 grams dairy free dark chocolate (melted)
  • 1 stem ginger ball (chopped finely)
  • 1 tablespoon syrup from the stem ginger
  • 100 grams gluten free self raising flour
  • 40 grams cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 25 grams ground almonds
  • 120 milligrams dairy free natural yoghurt
  • 75 milligrams vegetable oil
  • 2 eggs
  • 150 grams brown sugar
  • For the frosting
  • 200 grams dairy free dark chocolate
  • 75 grams dairy free spread
  • 2 tablespoons dairy free milk
Instructions
  1. Preheat the oven to 180 oC and line a 900g loaf tin

  2. Beat together the eggs and brown sugar

  3. Fold in the melted dairy free dark chocolate, chopped stem ginger and ginger syrup

  4. Stir in the gluten free self raising flour, cocoa powder, baking powder, ground cinnamon and ground almonds

  5. Pour in the dairy free natural yoghurt and vegetable oil

  6. Pour the cake into the lined loaf pan and bake in the oven for 45 minutes

  7. Remove from the oven and loaf pan and allow to cool completely

  8. To make the chocolate frosting place the dairy free dark chocolate, dairy free spread and dairy free milk in a bowl over a pan of boiling water

  9. Stir until melted and well combined

  10. Spread on top of the loaf can, feel free to add some extra chopped stem ginger
