Preheat the oven to 180 oC
Take the pastry sheet out of the fridge for about 10-15 minutes before using it
Unroll the sheet onto a baking tray or silicon sheet
Score with a sharp knife so you have a border of about 1" and prick the middle rectangle with a fork
Brush the border with the beaten egg and bake in the oven for 15 minutes
Gently press down the middle rectangle and set aside to cool
Whisk the dairy free whipping cream until light and fluffy and fold in the icing sugar and dairy free cream cheese
Stir in the melted dairy free white chocolate and spread on to the cooled pastry base
Drizzle on the strawberry jam and gently swirl into the cheesecake cream
Top with the chopped strawberries and cut into slices to serve
