Hello everyone, welcome to my new recipe for this delicious Gluten and Dairy Free Pancetta & Mushroom Pizza. I'm going through a phase of making my own pizzas, when I've got the time! A couple of months ago I shared my Brunch pizza and today I've gone for a simple ham and mushroom pizza.

I think my next attempt will be a stuffed crust one. Let me know if you have any other pizza ideas you would like to see a recipe for.

Ingredients
    Pizza Base:
  • 155 grams gluten free bread flour
  • 2 teaspoons dried active yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 90 milligrams water (warmed for 30 seconds in the microwave)
  • 2 tablespoons olive oil
  • For the toppings:
  • 6 tablespoons pizza sauce (*)
  • 70 grams dairy free cheese (grated)
  • 100 grams pancetta (chopped)
  • 200 grams mushrooms (sliced)
  • 1 teaspoon oregano
Instructions
    To make the pizza base:
  1. Mix the dry ingredients together in a large mixing bowl and stir in the olive oil and water

  2. Beat with a dough hook on an electric blender for 5 minutes or knead by hand, cover the bowl with cling film and leave in a warm place for one hour

  3. Remove the dough from the bowl and wrap in the cling film and refrigerate for one hour

  4. Preheat the oven to 200 oC, roll out the pizza dough into a 12 " circle and prick the dough with a fork, this stops air bubbles forming in the dough as it cooks

  5. To assemble the pizza:
  6. Add the pancetta and mushrooms into a shallow pan over a high heat.  Cook until browned, about 5 minutes.

  7. Spread the pizza sauce on the base and sprinkle on the grated dairy free cheese

  8. Top with the pancetta, mushrooms and oregano

  9. Bake in the oven for 12-15 minutes
