Mum’s 70th Birthday Cake (Gluten & Dairy Free)
Hello everyone, welcome to my latest recipe for my Mum's 70th Birthday Cake.
It was my Mum's 70th birthday last week so we used Easter weekend to celebrate with her - she was actually born on Easter Sunday. We went for dinner at a local Italian restaurant - the gluten free pizza was superb.
I love baking birthday cakes for my family and friends and lucky enough for me they are always happy with a gluten and dairy free version so I can enjoy it with them. I'm not the best at decorating big cakes like this but one of the things I can make are chocolate cigarillos. I've posted a link in the recipe to the article I used to learn how to make them.
You can also easily buy lots of cool decorations to put on cakes and a lot of the websites list the ingredients so you can make sure you are buying gluten and dairy free ones.

- 200 g dairy free spread
- 200 g caster sugar
- 4 eggs
- 200 g self raising gluten free flour
- few drops of red food colouring (optional)
- 3 tbsp raspberry jam
- 125 g dairy free spread
- 250 g icing sugar
- 50 g dairy free white chocolate cigarillos*
- floral cake decorations
- 1 Preheat the oven to 180 oC
- 2
Grease and line four 5" cake tins- 3
Beat together the caster sugar and the dairy free spread until light and fluffy- 4
Add the four eggs individually, beating well between each addition- 5
Add in the flour and food colouring, if using- 6
Mix until well combined- 7
Split the mixture between the four cake tins- 8
Bake in the centre of the oven for 15 minutes- 9
Remove from the oven and allow to cool before you start decorating- 10
Sandwich the cakes together with the raspberry jam and place on a cake board- 11
Spread the frosting on top of and around the sides of the cake- 12
Place the white chocolate cigarillos round three quarters of the cake- 13
Place your selected floral decorations on top of the cake and down the sidebirthday cake - 2
