For the grilled turkey:
- 4 turkey steaks
- drizzle of olive oil
- 2 tsp smoked paprika
- 1/4 tsp chilli flakes
For the dressing:
- 200 g pineapple
- 2 tsp fresh coriander
- 2 tbsp lime juice
- 1 tsp garlic paste
- 4 tbsp olive oil
- salt and pepper (for seasoning)
- 1 small chilli (deseeded)
For the salad:
- 4 handfuls of spinach leaves
- 4 handfuls of lettuce leaves
- 2 carrots (grated)
- 1 beetroot (shredded)
- Drizzle both sides of the turkey steaks with olive oil
- Season with salt and pepper
- Dust with the smoked paprika and chilli flakes
- Heat a shallow pan over a high heat
- Cook the turkey steaks for about 6 minutes on each side
- Place all the ingredients for the dressing in a blender and blitz until smooth
- Put the salad in a large bowl, top with the grilled turkey steak and drizzle on the chilli pineapple dressing
