Welcome to my latest recipe for Gluten Free and Dairy Free Tomato and Pulled Pork Potato Bake.

It's a wet miserable day in Scotland so this dish is a perfect winter warmer.  It's not an easy dish to photograph - I don't find anything in a casserole dish like this makes for a great photograph.  Luckily it makes up for it on the taste front!

I made bbq pulled pork buns the other day and the leftovers was used as a basis for this recipe.  I've made a smokey paprika tomato sauce, stirred through the pulled pork and topped with slices of (dairy free) creamy potato.  Baked in the oven until golden and bubbling this is total comfort food.

Ingredients
  • 500 grams pulled pork (*)
  • 400 milliliters passata
  • 1 onion (chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 500 grams potatoes (finely sliced)
  • 250 milliliters dairy free cream
  • 50 grams dairy free cheese (grated)
  • salt and pepper for seasoning
Instructions
  1. Preheat the oven to 180 oC
  2. Add a drizzle of olive oil to a shallow pan over a medium heat
  3. Saute the onion and garlic for 5 minutes
  4. Add in the paprika, oregano, basil and pulled pork
  5. Pour in the passata and season to taste, set aside
  6. Blanch the potato slices in salted boiling water
  7. Drain and set aside
  8. Assemble the potato bake in a large casserole dish by layering the potato slides, tomato pulled pork and dairy free cream

  9. Top with the dairy free cheese and bake in the one for 30 minutes or until the potato slices are tender
