Welcome to my latest recipe for Gluten Free and Dairy Free Smoked Salmon Brunch Tart.
I have in my cooking notepad that I wanted to make some sort of breakfast pizza and I kind of had that in my mind when I started this recipe but ended up with a pastry instead. My recipes tend to evolve based on what I have in the fridge at the moment I go to make it - I'll keep the breakfast pizza in mind for another recipe soon. I've been spending a spare hour or so working on writing up my recipes - I like them to be organised in journals
Today's tart would be perfect to enjoy on a lazy Sunday morning for brunch and is super quick to make now you can buy gluten and dairy free pastry from the supermarket. I've topped it with a little dairy free cream cheese. smoked salmon, avocado, rocket and a sprinkle of red onion and chives.

Preheat the oven to 180 oC
Roll out the pastry sheet
Cut into 4 equal sized rectangles and place on a lined baking sheet
Lightly score a border 1 cm from the edge of each rectangle and brush with a beaten egg
Prick the middle with a fork
Bake for 12 minutes then remove from the oven and press down the middle rectangle, this will give you room to fill the tart
Top with the salmon, red onion, rocket, avocado, chives and lemon zest
