Try out this recipe for Gluten and Dairy Free Pasta Pepperonata packed full of fresh peppers, tomatoes and balsamic vinegar

  • 200 grams gluten free pasta (cooked per instructions on the packet)
  • 1 yellow pepper (sliced)
  • 1 red pepper (sliced)
  • 1 red onion (sliced)
  • 12 cherry tomatoes (halved)
  • 2 garlic cloves (minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon balsamic vinegar
  • drizzle of olive oil
  • salt and pepper (for seasoning)
  1. Place the olive oil and peppers in a shallow pan over a low heat

  2. Cover and cook for 15 minutes

  3. Add in the onion, cherry tomatoes, garlic, parsley, balsamic veingar and seasoning

  4. Cook for another 15 minutes or until you have a thick rich sauce

  5. Stir in the cooked gluten free pasta and season to taste

  6. Divide between two bowls and serve
