Hello everyone, my latest dinner recipe is for this delicious Gluten Free and Dairy Free Pasta Peperonata. It is really nice to have a pasta dish that is a little bit different – rather than the traditional tomato sauce or creamy sauce. This dish is made using peppers, red onion, balsamic vinegar and a few other bits and pieces. It makes for a really flavoursome dish which feels fresh and light for Spring/Summer time.
The sauce is naturally gluten and dairy free which is great as you only need free from pasta. I saved some of this dish and had it cold for the lunch the next day. I think this will become one of regular pasta dishes when I’m planning meals.

Try out this recipe for Gluten and Dairy Free Pasta Pepperonata packed full of fresh peppers, tomatoes and balsamic vinegar
Place the olive oil and peppers in a shallow pan over a low heat
Cover and cook for 15 minutes
Add in the onion, cherry tomatoes, garlic, parsley, balsamic veingar and seasoning
Cook for another 15 minutes or until you have a thick rich sauce
Stir in the cooked gluten free pasta and season to taste
Divide between two bowls and serve
