Ingredients
  • 350 grams potatoes (diced)
  • 1 tablespoon olive oil
  • 1 teaspoon fajita seasoning
  • 2 eggs
  • 1 avocado (diced)
  • 2 tablespoons tomato salsa
  • salt and pepper (for seasoning)
Instructions
  1. Preheat the oven to 180 oC

  2. Place the potatoes, olive oil, fajita seasoning and salt and pepper into a bowl and mix until well coated

  3. Place on a baking sheet and bake in the oven for 30 minutes

  4. While the potatoes are baking fry your eggs in a little olive oil

  5. Plate up the potatoes, eggs, avocado and salsa

  6. Season with salt and pepper
