Hello everyone, welcome to my latest dinner recipe for Gluten Free and Dairy Free Chicken & Sweet Potato Bake.

I’ve had this recipe in my notebook for ages and finally got round to make it last weekend.  It’s a really easy meal to serve if you have people round for a casual dinner.  You can prep all the vegetables in the morning and then all you have to do is place them, with a few extra bits, into a casserole dish and bake in the oven.

I used sweet potatoes, onion, broccoli and tomatoes but you can add any other vegetables you have in the fridge and are wanting to use up.

Try out my new recipe for Gluten Free and Dairy Free Chicken & Sweet Potato Bake ready on the table in under an hour

Ingredients
  • 2 chicken breasts (cut into 3 pieces)
  • 250 grams sweets potatoes (peeled and diced)
  • 1 onion (cut into 6 chunks)
  • 1/2 broccoli (cut into florets)
  • 8 cherry tomatoes
  • 2 garlic cloves (minced)
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • 100 milliliters chicken stock
  • salt and pepper (for seasoning)
Instructions
  1. Preheat the oven to 180 oC

  2. Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl

  3. Mix until well combined

  4. Pour into a casserole dish and roast in the oven for 25 minutes

  5. Add in the chicken pieces and chicken stock

  6. Return to the oven for another 25 minutes
