Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Chicken Kofta Curry.
Kofta curry, or sometimes just called kofte, is a delicious dish originating in Pakistan. Tender meatballs are simmered in a rich flavoursome curry sauce.
I prefer to make this type of curry with either minced chicken or turkey as I think it makes it a bit of a lighter dish. That is just personal preference so feel free to swap this out for pork, beef or a vegan mince substitute. I quite like cooking my meatballs in the oven - it keeps them nice and tender and ensures they are cooked all the way through. You can also grill or pan fry them if you want to avoid using the oven.
I've made a simple curry sauce to accompany the meatballs with a base of onion and peppers. With this type of meatball curry I like a creamier tomato based curry sauce so I've added in chopped tomatoes and some dairy free Alpro cream.
If you like this idea but are short on time or not feeling like a confident cook then you can buy prepared meatballs. A lot of supermarket meatballs are marked gluten free so they should be easy to find. You can also look for a jar of gluten and dairy free curry sauce if you want to make it even easier.
I served my curry with some pilau rice and my favourite gluten and dairy free garlic naan breads from Wheat Free Bakery.
