Chicken Kofta Curry (Gluten Free, Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Chicken Kofta Curry.

Kofta curry, or sometimes just called kofte, is a delicious dish originating in Pakistan.  Tender meatballs are simmered in a rich flavoursome curry sauce.

Meatballs

I prefer to make this type of curry with either minced chicken or turkey as I think it makes it a bit of a lighter dish.  That is just personal preference so feel free to swap this out for pork, beef or a vegan mince substitute. I quite like cooking my meatballs in the oven - it keeps them nice and tender and ensures they are cooked all the way through.  You can also grill or pan fry them if you want to avoid using the oven.

Curry Sauce

I've made a simple curry sauce to accompany the meatballs with a base of onion and peppers.  With this type of meatball curry I like a creamier tomato based curry sauce so I've added in chopped tomatoes and some dairy free Alpro cream.

Making it Easier

If you like this idea but are short on time or not feeling like a confident cook then you can buy prepared meatballs.  A lot of supermarket meatballs are marked gluten free so they should be easy to find.  You can also look for a jar of gluten and dairy free curry sauce if you want to make it even easier.

To Serve

I served my curry with some pilau rice and my favourite gluten and dairy free garlic naan breads from Wheat Free Bakery.

Ingredients
    For the koftas:
  • 500 grams chicken or turkey mince
  • small handful of shredded fresh coriander
  • 1 teaspoon oregano
  • 1/2 red onion finely diced
  • 1 garlic clove minced
  • salt and pepper for seasoning
  • For the curry sauce:
  • 1 onion diced
  • 1 pepper sliced
  • 2 garlic cloves minced
  • 3 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1/4 teaspoon chilli flakes
  • 2 x 400g can of chopped tomatoes
  • 200 milliliters chicken stock
  • 80 milliliters dairy free cream
  • salt and pepper for seasoning
Instructions
    To make the meatballs:
  1. Preheat the oven to 180 oC and line a baking sheet with either parchment paper or tinfoil
  2. In a large bowl combine all the kofta ingredients
  3. Shape into 12 koftas and place on the baking sheet
  4. Bake in the centre of the oven for 20 minutes
  5. To make the sauce:
  6. Place the olive oil in a large pan over a medium heat
  7. Add in the garlic, garam masala, turmeric and chilli flakes
  8. Cook for a couple of minute
  9. Stir in the onions and peppers and saute for 5 minutes
  10. Pour in the chicken stock and chopped tomatoes
  11. Bring to the boil and simmer for 20 minutes
  12. Stir in the dairy free cream, chicken koftas and season to taste

  13. Divide between four bowls and serve with rice
