Strawberry and Chocolate Cheesecake (Gluten & Dairy Free)

Hello everyone, today’s recipe is for Gluten and Dairy Free Strawberry and Chocolate Cheesecake. I think cheesecake is probably my go to dessert when I meet up with family. It took me a while to perfect a recipe that was easy to make that was both gluten and dairy free.  

My local health store stocks dairy free whipping cream in a choice of coconut, soya or rice. You can also find this online in vegan stores and has been a game changer in dessert recipes for me.

This week has been a bit chaotic – I’m in hospital for an operation next week. This has been made a bit more stressful with all the COVID-19 tests and self-isolating required before my hospital stay.

Ingredients
  • 200 grams gluten free digestive biscuits crushed
  • 100 grams dairy free spread melted
  • 225 grams dairy free cream cheese
  • 60 grams icing sugar
  • 65 grams dairy free dark chocolate melted
  • 225 grams dairy free whipping cream
  • 400 grams strawberries chopped
Instructions
  1. Preheat the oven to 160 oC
  2. Grease a 10cm by 20cm rectangle flan tin
  3. Mix together the crushed biscuits and melted spread
  4. Press into the flan tin base and up the edges
  5. Bake in the oven for 12 minutes and then set aside to cool
  6. Whisk the dairy free whipping cream until light and fluffy
  7. Whisk in the icing sugar and dairy free cream cheese
  8. Fold in the melted dairy free dark chocolate
  9. Spread on to the cooled biscuit base
  10. Top with the chopped strawberries and then chill in the fridge for 2 hours
  11. I topped mine with a drizzle of dark chocolate before serving
