Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Spiced Pumpkin and Oat Pancakes.

These pancakes taste very hearty and wholesome due to the addition of the pumpkin puree and gluten free oats. A perfect use for that leftover Halloween pumpkin.

Ingredients
  • 110 g gluten free self-raising flour
  • 40 g gluten free oats
  • 1 tbsp light brown sugar
  • 200 g pureed pumpkin
  • 2 eggs
  • 60 ml dairy free milk
  • 1 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
Instructions
  1. Place all the ingredients into a large bowl and mix until it forms a thick batter
  2. Heat a little olive oil in a frying pan on a medium heat
  3. Place about 2 tablespoons of mix into a thick disc shape
  4. Cook for about 2 minutes on each side
  5. Serve with maple syrup, a bit of dairy free spread and a sprinkle of cinnamon
