Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Mocha Pancakes.

My regular followers will know how much I love my pancakes - they are my favourite weekend treat and I love to try new flavour combinations. This weekend I've made mocha pancakes - chocolate pancakes with an espresso shot - what better way to start the day?

Ingredients
  • 90 g gluten free self raising flour
  • 10 g cocoa powder
  • 1 tbsp caster sugar
  • 1 egg
  • 1 shot of espresso
  • 80 ml dairy free milk
Instructions
  1. In a large bowl stir together the flour, cocoa and caster sugar
  2. Whisk in the egg
  3. Gradually beat in the dairy free milk and espresso until you have a smooth pancake batter
  4. Heat a drizzle of olive oil in a shallow pan over a medium heat
  5. Split the batter into four and cook the pancakes for a couple of minutes on each side
