    For the chocolate sponge:
  • 250 grams dairy free spread
  • 250 grams caster sugar
  • 4 eggs
  • 190 grams gluten free self raising flour
  • 35 grams gluten and dairy free cocoa powder
  • 1 teaspoon baking powder
  • 30 grams ground rice or almonds
  • 3 tablespoons dairy free milk
  • For the topping:
  • 100 grams dairy free dark chocolate melted
  • 50 grams dairy free spread
  • 200 grams icing sugar sifted
  • 150 grams strawberries
  • 40 grams dairy free white chocolate melted
  1. Preheat the oven to 180 oC
  2. Cream the dairy free spread and sugar together for a couple of minutes until light and fluffy
  3. Add the eggs one at a time, beating well after each addition
  4. Add the flour, cocoa, baking powder and ground rice/almonds and beat well to combine
  5. Add in the dairy free milk and mix in
  6. Line a 8" square cake tin
  7. Pour the mixture into the cake tin
  8. Place in the oven and bake for 40 minutes
  9. Remove the cake from the oven and cake tin and allow to cool on a wire rack
  10. To make the chocolate icing beat together the melted dark chocolate and dairy free spread
  11. Gradually add the icing sugar until it forms a soft fudge texture
  12. Spread on top of the cake and top with the strawberies and a drizzle of melted dairy free white chocolate
