  • 1 medium banana (mashed)
  • 65 grams peanut butter
  • 35 grams brown sugar
  • 50 grams caster sugar
  • 85 grams gluten free plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 30 grams dairy free chocolate chips (optional)
  1. Preheat the oven to 180 oC
  2. Beat together the mashed banana, peanut butter, brown sugar and caster sugar
  3. Stir in the cinnamon, flour, baking powder and chocolate chips
  4. Shape the dough into a log and cut into 15 cookies
  5. Place the cookies on a parchment lined baking sheet
  6. Bake in the oven for 12 minutes
  7. Allow to cool before enjoying
