Apple Muffins with Oat Topping (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Apple Muffins with Oat Topping.

I miss those mornings when you just nip into a cafe and get a treat muffin for breakfast along with my usual bucket of coffee. I've got the coffee covered with my soya milk latte but I have been craving a big muffin to go along with it. I've made these apple muffins which are topped with oats. A lot has been written about whether or not oats are suitable for coeliacs, personally I can tolerate oats but only if they are certified gluten free. If you can't have oats then they can be easily left out of this recipe.

Ingredients
  • 2 eggs
  • 2 egg whites
  • 160 g dairy free spread
  • 300 g caster sugar
  • 300 g self-raising gluten free flour
  • 125 ml dairy free milk
  • 2 tsp cinnamon
  • 4 apples (peeled, cored and diced)
  • For the topping:
  • 3 tablespoons gluten free oats
  • brown sugar for sprinkling on top
  • cinnamon for sprinkling on top
Instructions
  1. Preheat the oven to 180 oC
  2. In a large bowl beat together the dairy free spread and sugar until light and fluffy
  3. Add the eggs and egg whites, mixing well between each addition
  4. Stir in the flour, milk and cinnamon
  5. Stir in the apple chunks
  6. Line a muffin tin with paper cases and fill each case3/4 full with the muffin mix
  7. Sprinkle the oats, cinnamon and brown sugar on top of each muffin
  8. Bake in the centre of the oven for 25 minutes
  9. Remove from the oven and cool on a wire rack
