Hello everyone, welcome to my latest recipe for Gluten & Dairy Tiramisu Cupcakes.

It has been another busy week and my website has had a complete makeover.  I started to bring in the updates at the beginning of the week and so far it has received lovely feedback from my Facebook followers.

I was going for a more modern feel and trying to make better use of some of my favourite food photographs.  Over time I'll be updating the recipes so they can be printed out in a recipe card format.

Back to baking rather than web design and today's recipe is for tiramisu cupcakes.  I made these when the family got together to celebrate Mother's Day.  I made a tiny baby version minus the alcohol and coffee for my little niece.

Description

A chocolate cupcake with a splash espresso and liqueur

Ingredients
    For the cupcakes:
  • 150 grams dairy free spread
  • 150 grams caster sugar
  • 3 eggs
  • 150 grams gluten free self raising flour
  • 1 tablespoon cocoa powder
  • 1 tablespoon instant coffee
  • 2 tablespoons boiling water
  • 40 milliliters gluten and dairy free liqueur (I used Bailey's Almande, optional)
  • For the frosting:
  • 150 grams dairy free spread
  • 300 grams icing sugar
  • cocoa powder (for dusting)
Instructions
  1. Preheat the oven to 180 oC 

  2. Beat together the dairy free spread and caster sugar until light and fluffy 

  3. Beat in the eggs one at a time 

  4. Mix together the boiling water and coffee until dissolved 

  5. Stir in the flour, cocoa powder, coffee and liqueur 

  6. Divide between 8 muffins cases and bake for 20 minutes 

  7. Remove from the oven and allow to cool completely 

  8. Make the frosting by beating together the dairy free spread and icing sugar 

  9. Pipe onto the cupcakes and dust with cocoa powder
