Stem Ginger Cookies (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for  Gluten and Dairy Free Stem Ginger Cookies.

I'm feeling a bit sorry for myself this weekend as I have a stress fracture in my left foot.  I'm back in my AirCast walker boot and have decided to have a peaceful weekend.  I was supposed to be visiting friends in London but for once have been sensible and decided to take a couple of days off my feet to try and see if it kicks off the healing process.

I've been doing some Autumn themed baking in the last few weeks as the weather changes.  For me this means comforting bakes packed full of warming spices.  Next week I'll be sharing a new carrot cake recipe and I also have a pistachio shortbread appearing soon.  These cookies are packed full of beautiful stem ginger and are simple to make if you are short on time.

Description

Soft and chewy stem ginger cookies

Ingredients
  • 120 grams dairy free spread (melted)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon baking powder
  • 120 grams brown sugar
  • 120 grams gluten free plain flour
  • 180 grams gluten free oats
  • 1 tablespoon stem ginger (chopped)
Instructions
  1. Preheat the oven to 180 oC

  2. Line a baking sheet with parchment paper

  3. Place the baking powder, brown sugar, flour and oats in a large bowl

  4. Stir until mixed

  5. Pour in the melted dairy free spread, honey/maple syrup and chopped ginger

  6. Place tablespoons of mixture on the baking sheet leaving enough room so the cookies can spread in the oven

  7. Bake for 12 minutes

  8. Cool before enjoying
