    For the cake:
  • 225 grams dairy free spread
  • 225 grams caster sugar
  • 4 eggs
  • 2 teaspoons red food gel
  • 1 tablespoon cocoa powder
  • 225 grams gluten free self raising flour
  • 30 milliliters dairy free milk
  • 1 teaspoon lemon juice
  • For the frosting:
  • 400 grams dairy free cream cheese
  • 100 grams dairy free cream cheese
  • 250 grams icing sugar
  • 1 teaspoon vanilla extract
  1. Preheat the oven to 180 oC
  2. Greas and line two 8" round cake tins
  3. Stir together the lemon juice and dairy free milk and set aside
  4. Cream together the dairy free spread and caster sugar until light and fluffy
  5. Beat in the eggs one at a time
  6. Stir in the red food gel, cocoa powder and gluten free self raising flour
  7. Mix in the milk mixture
  8. Divide between the two cake tins and bake for 35 minutes
  9. Remove from the oven and allow to cool completely
  10. Make the frosting by whisk together the dairy free cream cheese, dairy free spread, vanilla extract and icing sugar until light and fluffy
  11. Use half the frosting to sandwich together the cakes and the rest for the top
