Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Peanut Butter & Jelly Waffle Sandwiches.

I'm back going through a phrase of using my waffle iron again - it happens every few months or so!  This time I've been making these lovely little peanut butter and jelly waffles sandwiches - they are perfect to enjoy any time of the day.

If you don't have a waffle iron you can use this recipe to make pancakes and top them with the peanut butter and jelly.

Ingredients
  • 1 egg
  • 115 ml dairy free milk
  • 20 g dairy free spread (melted)
  • 70 g gluten free plain flour
  • 2 tbsp caster sugar
  • 1 tbsp peanut butter
  • 1 tbsp strwaberry jam
Instructions
  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and caster sugar
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Sandwich the waffles together using the peanut butter and strawberry jam
