Mini Double Chocolate Berry Cakes (Gluten & Dairy Free)

Hello everyone, I've been in the kitchen baking some Gluten and Dairy Free Mini Double Chocolate Berry Cakes.

I don’t know about you guys but I think lockdown has increased my sweet tooth.  I feel like if I’ve achieved a productive morning at work I ‘deserve’ a sweet treat after lunch. This craving is also a good reason for me to make a few new baking and dessert recipes for the website - everyone is a winner!

Two weeks ago I made a small batch of these delicious mini chocolate and berry cakes.  Light chocolatey sponge is  sandwiched together with chocolate frosting and berry jam.  Perfect with paired with a big cup of coffee.

Description

Try my cute little Gluten and Dairy Free Mini Double Chocolate Berry Cakes. Perfect sponge cakes sandwich together with berries and chocolate.

Ingredients
    For the cakes:
  • 150 grams caster sugar
  • 150 grams dairy free spread
  • 3 eggs
  • 150 grams gluten free self raising flour
  • 1 tablespoon cocoa powder
  • For the frosting:
  • 2 tablespoons raspberry jam
  • 200 grams icing sugar
  • 100 grams dairy free spread
  • 1 tablespoon cocoa powder
  • 200 grams fresh mixed berries
Instructions
  1. Preheat the oven to 180oC
  2. Grease an line an individual cake mould tray
  3. Whisk together the caster sugar and dairy free spread until light and fluffy
  4. Beat in the three eggs one at a time
  5. Stir in the gluten free flour and cocoa powder
  6. Three quarter fill each of the moulds with the cake mixture
  7. Bake in the oven for 20 minutes
  8. Remove from the oven and cake moulds
  9. Allow to cool completely
  10. Make the frosting by whisking together the icing sugar, dairy free spread and cocoa powder until light and fluffy
  11. Cut each mini cake in half and spread half with the frosting and half with the berry jam
  12. Sandwich the cakes back together
  13. Spread some frosting on the top of each cake and top with mixed fresh berries
