Mincemeat Cheesecake (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Mincemeat Cheesecake.

I can’t believe it is only a week to Christmas - luckily this year I’m feeling super prepared.  I’ve been to a couple of Christmas parties so far and the gluten free offerings have been pretty good.  Only one slightly disappointing main meal where they removed all the tasty bits of the turkey dinner but weirdly enough supplied a great starter and dessert.

I made this Christmas cheesecake twice - the first time in a glass and the second time as a traditional cheesecake.  Both tasted great but for some reason photographed in a glass it just didn’t look that nice.  It annoyed me so much I made it again in a traditional round cheesecake shape and took it round to my sisters for dinner!

A crumbly gluten free base is topped with a layer of Christmas mincemeat and a light fluffy dairy free cream cheese mix.  Perfect to prep ahead for Christmas parties and dinners.

Ingredients
  • 200 grams gluten free digestie biscuits (crushed)
  • 100 grams dairy free spread (melted)
  • 6 tablespoons Christmas mincemeat
  • 220 grams dairy free cream cheese
  • 80 grams icing sugar
  • 200 milliliters dairy free whipping cream (*)
  • zest of one orange
Instructions
  1. Mix together the crushed biscuits and melted dairy free spread

  2. Press into the bottom of a 7" round flan tin

  3. Top with the Christmas mincemeat

  4. Whisk the dairy free cream until light and fluffy

  5. Whisk together the dairy free cream cheese and icing sugar

  6. Fold in the dairy free whipped cream

  7. Spread on top of the mincemeat

  8. Chill in the fridge for at least 4 hours

  9. Top with orange zest prior to serving, I also added some Christmas tree sprinkles

* you can buy dairy free whipping cream online or at your local health store, I usually use SoyaToo - they make a soya milk and rice milk version
